Pancakes with Apple Compote for Rosh Hashanah!
It's fall and I'm eating up everything apple and everything spice. With the Jewish high holidays coming up this weekend I was trying to think of how to incorporate all these fall feelings into a special treat for the blog! For the big Jewish holidays I like to make a special or unique treat that plays off of a traditional treat of that holiday. So for Rosh Hashanah this year I decided to play off of the customary apple cake and instead make apple pancakes! Most Rosh Hashanah cakes are made with fresh apples and honey to represent the hopes for a fruitful and sweet upcoming year. So, I created a spiced pancake with buttered brown sugar apples and topped with honey maple granola to kick off a super sweet new year and a happy fall!

Jewish Food
As you may know from my other Jewish recipes posts, my strongest connection with Judaism is the relation with food and culture, which mostly came from my relationship with my grandmother on my father's side (aka my Jewish side). This recipe however was particularly fun because I got to make these pancakes on a trip back to California and share them with my family. Although my grandmother is no longer with us, I made these pancakes extra sweet in memory of her.

(makes enough for 6+ people, you can freeze extra pancakes and jar granola)
Ingredients for Pancakes with Apple Compote
- flour
- sugar
- baking powder
- salt
- cinnamon
- nutmeg
- eggs
- butter (2 sticks)
- milk
Ingredients for Buttered Brown Sugar Apples
- apples, peeled and sliced
- butter (1 stick)
- brown sugar
- cornstarch
- cinnamon
- nutmeg
- ginger
Ingredients for Honey Spiced Granola
- oats
- flour
- brown sugar
- honey
- maple syrup
- coconut oil
- cinnamon
- nutmeg
- all spice
- ginger
- cloves

How to make Pancakes with Apple Compote
- Mix all dry ingredients in a large bowl. In a smaller bowl whisk all the wet ingredients together. Then add the wet ingredients into the dry and whisk until mixed well.
- On a medium hot heat, warm your griddle or pan on the stove. Using a scoop or ¼ measuring cup, pour batter onto the heated surface. Once the pancake starts to bubble all over, flip and allow it to cook on the other side.
- Remove once cooked through and store on a plate, cover with a towel or napkin to keep in heat.
How to make Buttered Brown Sugar Apples
- In a large saucepan heat butter until melted. Add brown sugar until dissolved. Once dissolved, add cornstarch to thicken and spices. Once cornstarch has mixed in thoroughly, add the apples.
- Let apples simmer in the mixture and continue to cook until they have completely softened.
How to make Honey Spiced Granola
- Preheat your oven to 325° F and prepare a baking sheet with parchment paper.
- Mix all wet ingredients and spices in a small ingredient bowl.
- In a larger bowl mix the oats, flour, and brown sugar. Then add the wet ingredient mixture into the dry mix.
- Lay the mix onto the baking sheet and pop into the oven for 10 minutes. Then rotate and cook for another 10 minutes.
- Allow the granola to cool and break up the pieces of granola.

How to assemble Apple Pancakes
- Place pancakes on your plate, add apples and sauce they cooked in.
- Top with a bit of granola, or layer each pancake for even more juicy flavors!
- Enjoy!

- 4 cups all-purpose flour

- 1 cup brown sugar packed
- 1 teaspoon cornstarch
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ginger
Honey Spiced Granola:
- 1½ cup oats
- 3 tablespoon flour
- 1 tablespoon brown sugar
- ¼ cup honey
- ¼ cup maple syrup
- 1 tablespoon coconut oil
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- ½ teaspoon all spice
- ½ teaspoon ginger
- ¼ teaspoon cloves
