Dough Ingredients
Unsalted butter, sugar, vanilla extract, eggs, all-purpose flour, crushed Captain Crunch cereal, baking powder, salt, milk.
Cream Butter and Sugar
Whipping your butter and sugars together for 4-6 minutes will blend the sugars into the cream and keep the dough from being grainy.
Chill the Dough
Cover the dough and chill in the fridge while you make the filling. But only for up to 30-ish minutes. If it stays in too long, remove to thaw.
Make Cereal Filling
Whip heavy whipping cream until it peaks. Then add in crushed Captain Crunch.
Make and Bake Cookies
Shape dough into circles, fill with filling, fold into triangle "hat" shapes, place on a baking sheet, bake for 10-12 minutes.
