Heat the sugar and water in a small a pot on the stove over medium heat. Stir to ensure the sugar is fully covered by water. Once the water is gently boiling remove from heat and add thyme. Let the thyme sit for 5 minutes in the water and then remove. Pour syrup into a bottle with a lid and place in the refrigerator to chill.
Blackberry Puree
Using a blender or food processor, blend about 5oz of the blackberries (leave remaining berries for garnish). Once the berries have completely been pureed, strain through a fine sieve into a bowl. Discard seeds.
Drink
In a glass, pour your ice and top with your other ingredients. Mix. Garnish.
Notes
- Layering: To get a layered effect you'll want to mix your club soda, alcohol, lemonade and pour that into a glass first with the ice. Then mix your blueberry and simple syrup together. Then pour the blackberry mix into the glass directly onto the ice, or pour over a cold spoon.
