Slice peaches into ½" pieces (skin on). Place the slices in a large bowl and mix with the juice of the lemon, sugar, cinnamon, nutmeg, salt, honey and maple syrup. Place in the refrigerator while you prepare your dough.
Take the pre-made dough and roll it flat (about ¼- ½" thick) onto a floured surface. Using a cereal bowl as a cutter, cut out a small/medium circle out of the dough. Cut out as many circles as you can. Mine cut out about 4 circles.
In a small bowl make your egg wash by whisking egg and water.
Lay the circles onto a baking sheet covered in parchment paper. Lay out your peaches on top of the dough about 1-2" away from the edge. Fold up the edges and crimp to hold them together. Brushing an egg wash on the dough where it is crimped will help keep the dough together. Or you can use a cream wash for extra browning. Sprinkle the top with coarse sugar.
Place in the oven for 25-30 minutes or until golden brown.
Remove and allow to cool. Serve with ice cream!

- Size: You could also just make one large galette. Your servings will be more and your bake time will about double.
