Heat your water in a pot on the stove (or in a kettle) until almost boiling.
While water is boiling, in a small sauce pan place the sugar in the pan, cover with ¼ cup of water. Place on medium-high heat and heat until the sugar has dissolved. Stir occasionally. This will create a simple syrup.
Once your 8 cups of hot water has heated add the hibiscus flowers into the water. Let the hibiscus steep for 8-12 minutes. The water should become a beautiful red/purple color.
Sieve out the leaves and add the simple syrup and stir. Pour the iced tea into a pitcher or container with a pour lip.
Equally pour your mix into your popsicle molds (or paper cups if you don't have a mold) and place into the freezer. About 30 minutes into the freeze remove and add your popsicle sticks.
Let freeze for 5 hours or overnight.
