Small Batch Carrot Cupcakes.

Makes just 6 cupcakes. Perfect for a small gathering or dessert at home.

Ingredients

There are 3 parts to making these cupcakes. The first is the cupcake itself. You'll need: sugar, grape seed oil, an egg, vanilla, apple sauce, flour, cinnamon, ginger,  nutmeg, all spice, cloves, mace, baking powder and soda, salt.

Making Cupcakes

Mix together and use a cookie scoop to evenly distribute cupcakes. Use the center 6 wells and fill outer with 1-2 Tbsp of water.

Graham Cracker Crumble

While those bake, you'll take graham cracker, brown sugar, melted butter, and salt and pulverize. Then spread onto a baking sheet.

Finish Crumble

Bake the crumble. Then break it apart into small pieces by hard or with a fork.

Cream Cheese Frosting

Whip butter and cream cheese together until fluffy. Then add in vanilla and powdered sugar.

Decorate Cupcakes

Hallow out the cupcakes and fill with crumble. Pipe on frosting and top with crumble and a mini carrot! Serve and enjoy!
