Summer Thyme Lemonade! This fun drink is perfect for sipping on a summer day. The combo of blackberry and lemonade is always delicious, but adding this thyme simple syrup adds something special. And if you haven't made a simple syrup before this is a great recipe to start with.

Ingredients for Lemonade
- ¾ cup sugar
- ¾ cup water
- 3-4 sprigs thyme
- 6 oz fresh blackberries
- Lemonade or Lemon Italian soda
- Club soda
- Gin or vodka (optional)
How to make Simple Syrup
- Heat the sugar and water in a small a pot on the stove over medium heat. Stir to ensure the sugar is fully covered by water.
- Once the water is gently boiling remove from heat and add thyme.
- Let the thyme sit for 5 minutes in the water and then remove. Pour syrup into a bottle with a lid and place in the refrigerator to chill.
How to make Blackberry Puree
- Using a blender or food processor, blend about 5oz of the blackberries (leave remaining berries for garnish).
- Once the berries have completely been pureed, strain through a fine sieve into a bowl. Discard seeds.
Ingredients per glass of Summer Thyme Lemonade
- ⅔ cup lemon Italian soda (or regular lemonade)
- 1 Tbsp thyme simple syrup*
- 1 Tablespoon blackberry puree**
- ⅔ cup club soda for virgin version OR ½ cup soda and 3 Tbsp gin or vodka
How to Make Summer Thyme Blackberry Lemonade
- In your drinking glass mix lemon soda and simple syrup.
- Add a few ice cubes.
- In a separate cup (preferably one with a pour lip) mix blackberry puree and club soda (and alcohol).
- Slowly pour the blackberry mixture onto the ice cubes to create the layered look. If you'd like to incorporate ingredients more, swirl the glass gently.
- Garnish with fresh berries and thyme sprigs.

Drink
- In a glass, pour your ice and top with your other ingredients. Mix. Garnish.
Notes
- Layering: To get a layered effect you'll want to mix your club soda, alcohol, lemonade and pour that into a glass first with the ice. Then mix your blueberry and simple syrup together. Then pour the blackberry mix into the glass directly onto the ice, or pour over a cold spoon.
