Recipe for Strawberry and Pineapple Nice Cream!

This week I worked with my friend Alex from Delish Knowledge to film a Facebook Live demo to support a few of our favorite businesses, Fresh Thyme and Kura! Fresh Thyme Farmer’s Market is a Midwest based grocery shop that has healthy, fresh and organic options. It’s a favorite of mine and I can’t wait for them to open up more stores here is St. Louis.

As for their relationship with Kura, Fresh Thyme sells Kura in their stores and for the month of July they are giving out a package of strawberries for each large packet of Kura you purchase. Kura is a protein powder for your smoothies! It’s GMO and gluten-free, with natural ingredients and no added sugar. It comes in three different flavors, so be sure to check them out.

Making Smoothie Recipes:

When talking with Kura we discussed my love of smoothies, smoothie bowls, and this craze of nice creams. Nice cream is basically a thicker version of a smoothie that can be scooped like ice cream. It’s healthy, tasty, and you can definitely add protein powder to it to make it more of a meal! So since we only we able to make the smoothies in store for you all, we thought making recipe cards with the nice cream instructions would be helpful! However, if you weren’t there you couldn’t get the physical card. So, what better way to share them with you than the internet!

Below is one of the two nice cream recipes based around strawberries (the other linked below). I did a Tropical Strawberry nice cream and a Hibiscus Strawberry Coconut nice cream. They make enough for a whole container of ice cream. If you want less, just divide ingredients.

Ingredients for Strawberry Tropical Nice Cream:

  • 3 cups of frozen strawberries
  • 3 cups of frozen pineapple
  • ½ cup of coconut milk
  • 2 scoops of KURA vanilla powder
  • Fresh or shredded coconut for topping (optional)

How to make Nice Cream:

  1. Blend all ingredients in a blender or processor until smooth.
  2. Scoop out and eat directly or place in a loaf pan, cover with plastic wrap or parchment paper (make sure it is touching the top of the nice cream).
  3. Freeze overnight and scoop, top with fresh fruit and coconut, and serve.

Ingredients

Strawberry Tropical Nice Cream
  • 3 cups strawberries frozen
  • 3 cups pineapple frozen
  • ½ cup coconut milk
  • shredded coconut optional toppings

Instructions

  • Blend all ingredients in a blender or processor until smooth.
  • Scoop out and eat directly or place in a loaf pan, cover with plastic wrap or parchment paper (make sure it is touching the top of the nice cream).
  • Freeze overnight and scoop, top with fresh fruit and coconut, and serve.
  • Enjoy!
