Start making your apple cider by putting all the apple cider ingredients (minus the brown sugar) into a large pot on the stove set to a boil.
After about an hour, add brown sugar. Cover and allow to boil for at least another hour, or until the apples are completely mushy when you touch it with a wooden spoon.
Remove cinnamon sticks. Strain the apples from the juice into a jar.
