Place fruit and sugar in a small saucepan, cover with water. Place this on the stove until it simmers. Then take a muddler or a wooden spoon and mash the berries as best as you can. Stir occasionally on simmer for the next 5-7 minutes until nice and syrupy.
Pour the syrup and berries through a mesh sieve to remove chunks, but try to get as much of the liquid as possible into a jar or bowl. Throw out the pulp and seeds from berries.
Raspberry Mojito (for 1 cocktail)
Muddle 4-5 mint leaves with juice from ½ lime (about ½ Tbsp) and 1.5 ounces of the Raspberry syrup into your glass.
Add ice to glass. Over your ice pour 1.5 ounces rum and 3-5 ounces of club soda (up to the top of your glass). Stir and garnish. Make your second one the same way.
Notes
- Syrup: You have to keep a pretty close eye on your syrup and keep the heat fairly low. You don't want to burn anything or it will affect the entire batch.
- Sieve: If you don't have a sieve, no worries. You can use something like cheesecloth, but I would just leave the seeds since they don't bother me.
- Muddling: Don't have a muddler? No worries. You can use a wooden spoon or even the back side of a utensil. When you muddle you want to make sure you did this with only a little bit of liquid in the glad to make it easier and not splash out of the glass. Just follow the instructions below.
- Batching: You can for sure batch this recipe for a large pitcher/group. I would assume times-ing the recipe by 3 would fill a normal sized pitcher. I would suggest following all the same steps as below. When it comes to muddling, do that directly into the pitcher with the mint, lime juice and syrup. Then add the rest of the ingredients.
