This is my favorite and "famous" guacamole. Okay it's famous to like 4 people. But they REALLY love it. And I hope you do too!
I made a series of recipes for a cooking class at my full-time event planning/directing job. We made recipe cards and stations of about 3-4 people for each station. It was maybe one of the most entertaining classes I've ever coordinated...too many people not following instructions, adding too much spice, and generally being very dangerous and wild. But that's what you get with a group of staffers at a University. It was our "spring break" fun activities for having to work during the holiday and also a little break from the students. Honestly, one of the most difficult weeks for the Director of Executive Events who has to plan the Staff Week. But it was a great experience and I'm so grateful for my time and experiences there. Ingredients
- 2 large avocados
- 3 Tablespoons red onion, diced finely
- ½ jalapeno, minced - deseeded (able 2 teaspoons)
- 1 lime, juiced (about 1 tablespoon)
- them in themselves
- ¼ cup cilantro, chopped
- 1 teaspoon fajita seasoning
- Optional toppings: diced tomatoes and cotija cheese
How to make Guacamole
1. Peel, deseed and mash avocados in a medium sized bowl.
2. Squeeze the juice out of lime and cover the avocado. Mix.
3. Add onion, jalapeno, cilantro and seasoning to the same bowl, stir well.
4. Add optional toppings and enjoy.

This is a great guac recipe. Perfectly creamy and I love the lime. The cotija cheese on top is the perfect saltiness. Can't go wrong with this one!
