Every Thanksgiving we adorn our tables with pumpkins and gourds, children craft hand-shaped turkey art and we make more food than we can possibly eat in one evening: juicy turkey, fluffy mashed potatoes topped with turkey gravy, airy dinner rolls, savory stuffing, crisp roasted veggies, tart cranberry sauce, and of course, buttery, flaky pies. Tired of the parade of mashed potato and turkey sandwiches, potato pancakes, pot pies and turkey tetrazzini leftovers that typically follow the feast, though? Don't worry; we've got you covered.
The following seven recipes offer creative solutions for how to transform your T-giving leftovers into completely new and delicious meals. Each family has their own set of Thanksgiving staple recipes: Some keep with tradition, while others delve into deep frying turkeys, making dinner rolls shaped like pumpkins or adding bacon to every dish. No matter how you prepare your dishes, these leftovers recipes will work well with the food you have on hand. Almost all of the additional ingredients you'll need should be found in your pantry or fridge.
I make the same apple crumble pie for Thanksgiving every year, and it's now a staple at my family's celebration. However, some of my family members love pumpkin cheesecake and pecan pie, so we end up with three desserts - and plenty of leftovers. Instead of eating a piece of pie every day for a week - which honestly, I wouldn't mind - we make it even more fun and delicious as apple pie milkshakes. Basically, this is pie à la mode you can drink through a straw.
Serves 2
Ingredients for Milkshakes
- 6 heaping scoops vanilla ice cream
- ¼ cup whole milk
- 2 slices cold apple pie
- caramel sauce (for glass rim)
- ¼ cup cinnamon sugar (for glass rim)
- whipped cream
- leftover apple pie crust crumbles (for garnish)
How to make Apple Pie Milkshakes
- In the bowl of a blender, add ice cream and milk and pulse until well combined. Slice a little segment of crust from pieces of pie and serve for garnish. Add pie to blender and pulse until smooth.
- Pour a thin layer of caramel sauce onto a flat plate and pour a thin layer of cinnamon sugar onto a separate flat plate. Dip the rim of a tall glass into caramel sauce to cover and then immediately dip rim into cinnamon sugar. Repeat with remaining glass.
- Pour milkshake into glasses, top with whipped cream and garnish with apple pie crust crumbles or a sprinkle of cinnamon. Serve.
